Eleanor Cripp’s delicious chicken marinade
Serves: about 4-5
1 cup natural Greek yoghurt
1 tsp minced garlic
4 tbsp extra virgin olive oil
2 tsp dried oregano
1 tbsp runny honey
1 tsp sea salt
1/2 tsp ground pepper
3 large chicken breasts sliced into pieces*
grilled lemons
freshly sliced Italian parsley
In a bowl, stir together 1 cup natural Greek yoghurt, 1 tsp minced garlic, 4 tbsp extra virgin olive oil, 2 tsp dried oregano, 1 tbsp runny honey, 1 tsp sea salt, and 1/2 tsp ground pepper. Coat your chicken in the marinade and place in the fridge for at least 2 hours, or overnight.
I used about 3 large chicken breasts sliced into pieces, *however you can use this recipe for all cuts of chicken.
To cook, grill on a BBQ or or hot plate if you have one. Alternatively, the chicken can be roasted in the oven.
Serve with grilled lemons for drizzling and a scattering of freshly sliced Italian parsley.
